3 great 4th of july treats




Does food every bring back memories for you? It definitely does for me and these remind me of summers as a kid and the 4th of July. Here are our favorite three 4th of July treats!




FIREWORK FRUIT KABOBS


These are so simple and fun! All you need are 4 things to make the cutest 4th of July snack everyone will love





Ingredients:

Watermelon

Blueberries


Other:

Star shaped cookie cutter

Skewers


Directions:

- Cut watermelon into round slices

- Use star shaped cookie cutter to cut out watermelon stars

- put around 15* blueberries on skewer and top with watermelon star

- serve immediately or refrigerate until needed


*depending on your blueberry and skewer size use as many blueberries as you need but can still hold onto the skewer





DOUBLE CRUST PEACH COBBLER


Nothing says summer to me like peach cobbler. Landon grew up eating cobbler made with a cake mix, anyone else? I told his that wasn’t cobbler and the only way to make it was with a double crust.





Ingredients:


CRUST

2 1/2 cups flour

3 tbsp sugar

1/4 cup shortening (cold)

12 tbsp butter (sliced & cold)

1/4 tsp salt

1/4-1/2 cup ice water


FILLING

2 16 oz bags frozen peaches

-OR- about 10-12 fresh peaches, pitted & sliced

1 cup sugar

1 cup water

1/4 cup butter

1/4 tsp cinnamon

1/4 tsp nutmeg

pinch of salt

3-4 tbsp flour


Directions

-preheat oven to 375 a spray 9x13 baking dish


CRUST

-make crust, chill for 30 minutes

-sift flour, salt and sugar in a bowl

-add to a food processor (if yours is big enough to hold. mine was not & I pulsed the shortening & butter then added to my stand mixer)

-add shortening, pause about 6 times

-add butter, pulse 5-6 times

-add water, pulse until it forms a ball

-cut in half, wrap, & chill


FILLING

-melt butter over med. heat, add sugar & water. cool until sugar is dissolved

-add peaches, cinnamon, nutmeg, salt & flour. cook for 5 min. or until thickened


ASSEMBLE

-spray baking dish

-roll out crust to fit your pan, about 1/4” thick

-put in baking dish and bring up about an inch on the sides

-pour filling into crust

-roll out the other crust, place on top

-cut 4-6 slits to vent

-brush too with beaten egg (optional)

-bake 45 minutes or until crust is golden brown


serve with ice cream 🍑






RED, WHITE + BLUE POPS


These are so easy and fun to make! Honestly we make popsicles all summer long with anything we can find in our fridge...especially if the fruit isn't going to make it for another day, its great to throw into a popsicle!




Ingredients:

1 cup fresh blueberries

1 cup fresh strawberries

2 cups of your favorite yogurt*

*We used Greek vanilla yogurt


Directions:

- Chop strawberries to desired size, we did small cubes

- Mix whole blueberries, strawberries & yogurt

- Put into popsicle molds

- Freeze for 4 hours or overnight

- Enjoy!


You could also put strawberries and blueberries into a food processor and completely blend up. We wanted fruit chunks so we left ours whole.
